Addy To spread the data out for installation, as one disc wouldn't have enough space for everything.

Fluffy The game did not fit on one disc in 2003, so 3 are needed.

Josh / Proddy CDs only hold 700MB of data, and SHAR is nearing 2GB.
Later games used DVDs with a 4.7GB data limit (or 8.5GB if dual-layered), which is why the multiple disc practice kinda stopped.
